Cheddar-Stuffed Cheeseburgers
Here's how to upgrade burger night.

Skip the drive-through and dig into homemade Juicy Lucys in under half an hour—yes, really! Simply sandwich two patties with grated Cheddar, throw ‘em on the grill, then prepare to build the (gooey, cheese-filled) burger of your dreams.
Ingredients
- 2 1/2 Tbsp.
mayonnaise
- 1 1/2 Tbsp.
ketchup
- 1 1/2 lb.
ground beef
- 3 oz.
Cheddar cheese, coarsely grated (about 1 cup)
Kosher salt and pepper
- 4
hamburger buns
Green leaf lettuce leaves
- 2
tomatoes, sliced
- 1/2 lb.
sliced bacon, cooked until crisp
Directions
- Step 1Heat grill to medium. In small bowl, stir together mayonnaise and ketchup; set aside.
- Step 2Divide ground beef into 8 equal portions. Shape 4 into 1/4-inch-thick patties. Shape remaining 4 into 1/2-inch-thick patties, then use thumbs to make shallow 2-inch-wide indent in top of each patty.
- Step 3Divide cheese among indents (about 1/4 cup each), then top with remaining patties. Firmly pinch edges together (reshape into round patties if needed). Season both sides with a pinch of salt and pepper.
- Step 4Grill, covered, 3 to 4 minutes per side for medium to medium-well.
- Step 5Spread buns with mayonnaise mixture, top with burgers, and add toppings as desired.
