Grilled Bone-In Rib Eye

When you have a beautiful, marbled steak like rib eye, you don’t need to do much to make it delicious. Grilling it with the bone in will yield a juicier steak that gets rich, buttery flavor from the marrow.

11/2- to 2-pound bone-in rib eye steak
Kosher salt and pepper
Directions
- Step 1Let steak sit at room temperature 1 hour. Sprinkle both sides with 11/2 to 2 teaspoons salt and 1 teaspoon pepper.
- Step 2Heat grill to medium. Grill steak until instant-read thermometer registers 125°F, 4 to 5 minutes per side. Transfer to cutting board and let rest 10 minutes before slicing.
Steak Strategy: Slice just enough steak to serve right away; leave remaining piece intact and refrigerate, wrapped. When ready to reheat, bring to room temperature, then warm gently in skillet. Slice and serve with sunny-side up eggs.
