PSA: You don’t need to go to a restaurant to get a restaurant-quality salad! In just 15 minutes, whip up our creamy, ultra-savory Caesar dressing and toss with crunchy romaine and grated Parm for a salad that’s sure to steal the spotlight. Up the ante by using our homemade mayonnaise.
Ingredients
- 2 1/2
oil-packed anchovy fillets
- 1
large clove garlic, grated
Kosher salt and pepper
- 1/4 cup
mayonnaise
- 1 1/2 tsp.
Dijon mustard
- 1/2 tsp.
lemon zest plus 1 tablespoon lemon juice
- 12 oz.
romaine lettuce hearts (halved, or cut into thirds crosswise if large), leaves separated
- 2 Tbsp.
grated Parmesan cheese, plus more for serving
Directions
- Step 1Place anchovy fillets on cutting board, sprinkle grated garlic and 1/2 teaspoon salt on top and finely chop together, smashing with back of knife, until paste forms. Transfer to large bowl and whisk in mayonnaise, mustard, lemon zest, and juice and 1/4 teaspoon pepper to combine. Toss with romaine to coat, then grated Parmesan. Serve with additional Parmesan and cracked pepper if desired.
