Ingredients

peppers (red, yellow, or a combination), quartered
- 1
red onion, cut into 1/2-inch wedges
- 1 Tbsp.
oil
Salt
Pepper

small pork tenderloins, about 3/4 lb each
- 1/4 cup
apricot jam
- 2 Tbsp.
white wine vinegar
Directions
- Step 1Heat grill on medium-high. Toss peppers and red onion with oil and season with salt and pepper.
- Step 2Season pork tenderloins with 1/4 teaspoon each salt and pepper. Grill vegetables and pork, covered, turning occasionally, until vegetables are tender, 8 to 10 minutes. Transfer vegetables to cutting board.
- Step 3Mix 1/4 cup apricot jam and white wine vinegar in a bowl. Continue grilling pork, basting with sauce until cooked through (145°F), 3 to 6 minutes. Let rest 5 minutes before slicing. Coarsely chop peppers and serve with onion, pork, and any remaining sauce.
