This pasta bake is very easy to whip up and is sure to become a midweek family favourite.
This chicken and chorizo pasta bake is very simple to make, but doesn't compromise on flavour! Chicken and chorizo is cooked in a rich and creamy tomato sauce and then topped with mozzarella to create that cheesy pull we all love.
You're guaranteed to love this mildly spicy and creamy pasta bake and it only requires 20 mins of prep time too.
rigatoni
olive oil
skinless chicken breasts, cut into thin strips
chorizo sausage, cut into 5mm slices
passata
tomato puree
paprika
cayenne
dried oregano
soft cheese, we used Philadelphia
ball mozzarella, torn
If you don’t like spice, then simply omit the cayenne. For a smokey taste, try using sweet-smoked paprika.
Prawns would also be nice in this recipe, in place of the chicken. Fry off the prawns with the chorizo for 3min and continue with the recipe.
Any tubular pasta shape would work, if you don't have rigatoni.
