This simple one-pot pasta bake recipe incorporates all the flavours of a pepperoni pizza
Like pepperoni pizza? Then you'll love this simple pasta bake which has all the flavours of the famous topping.
We've used oregano, pepperoni, mozzarella and passata and poured over rigatoni pasta. Top with more mozzarella and grill until golden and bubbling.
300g (11oz) rigatoni pasta
olive oil
garlic cloves, crushed
tomato puree
(17 fl 0z) passata
tbsp finely chopped oregano leaves or dried oregano
125g (4oz) mozzarella, chopped
150g (5oz) grated mozzarella
25g (1oz) pepperoni
Cook pasta in a large pan of boiling salted water according to the instructions on the packet. Once cooked, drain well and reserve a large mug of the pasta cooking water. Preheat grill to medium.
Meanwhile, add the olive oil and garlic to a large non-stick frying pan, and cook over a low heat for about 1min, or until beginning to soften. Add tomato puree and cook for a further min. Stir in the passata and oregano and turn the heat up. Bubble for about 10min, or until thickened, then season to taste with salt and pepper.
Tip drained pasta into the tomato sauce and stir in a little of the reserved pasta water at a time until the sauce coats the pasta. Stir in the chopped mozzarella, then tip the pasta into a large ovenproof dish.
Scatter over the grated mozzarella and dot over the pepperoni slices. Grill for 3-5min, until golden and bubbling. Allow to sit for a minute before serving.
