If you prefer individual Easter nests, divide the cornflake mixture among cupcake cases
What's better than mini chocolate cornflake cake nests? A giant one filled with mini eggs of course! It's perfect for any Easter celebration. You can replace the dark chocolate with an equal weight of additional milk chocolate to make this nest more child friendly (as we have done in the recipe video).
How to make cornflake cakes
To make mini cornflake nests in cupcake cakes, follow the same method for recipe below (again replacing the dark chocolate with an equal amount of additional milk chocolate if you refer). If making 12 mini cornflake nests, halve the amount of ingredients for the recipe below and line a 12 hole muffin tin with muffin cases. Divide the mixture between the cupcake cases and mound up the sides of the cases (in order to fit the mini eggs). Chill to set, about 1hr, and then fill the middle with mini eggs. If you like, pipe chick faces onto the mini eggs using writing icing pens.
To follow the visual method for the mini cornflake nests above, scroll to the bottom of this page and find the recipe video for this more child friendly recipe.

dark chocolate, chopped
milk chocolate, chopped
butter, chopped
golden syrup
cornflakes
chocolate eggs, to decorate
Draw around the base of a 20.5cm cake tin on a piece of baking parchment. Flip the parchment over and lay on a baking sheet. Next, melt both chocolates, butter and golden syrup together in a large heatproof bowl set over a pan of gently simmering water (make sure the base of the bowl does not touch the water). Alternatively, microwave in a microwave-safe bowl on full power for 15sec bursts until melted.
Add the cornflakes to the melted chocolate mixture and carefully stir to coat.
Load the coated cornflakes on to the parchment, inside the marked circle - mounding up the sides to make it look like a nest. Chill to set, about 2hr.
To serve, fill the nest with chocolate eggs and bring to the table.
