This easy chorizo, chicken and cannellini bean traybake recipe makes the perfect midweek meal because it only takes 15 minutes of prep time, and is ready in under an hour.
It's baked in one tray, meaning there's minimal washing up to do and has a lovely sweet and savoury taste from the cherry tomatoes and zingy salsa verde.

Ingredients
1Tbsp.

2Tbsp.
harissa paste

bone-in skin-on chicken thighs

x 400g tins cannellini beans, drained and rinsed
700g
cherry tomatoes
60g
chorizo, finely chopped
For the salsa verde
25g
fresh coriander
25g
fresh mint, leaves picked
25g
fresh parsley
1Tbsp.
capers, drained and rinsed
1
small garlic clove
1tsp.
wholegrain mustard
Juice 1 lemon
75ml
olive oil
Directions
Step 1Preheat oven to 200°C (180°C fan) mark 6. In a large bowl mix the olive oil and harissa with some seasoning. Add chicken thighs and rub harissa mixture all over.
Step 2Put the cannellini beans, tomatoes and chorizo in a large roasting tin or ovenproof dish, season and stir to mix. Arrange chicken thighs on top, skin side up.
Step 3Cook in oven for 30-35min until chicken is cooked through. Meanwhile, whizz salsa verde ingredients with some seasoning in a food processor until finely chopped.
Step 4Drizzle salsa verde over chicken and serve with a green salad, if you like.
GH TIPS:
Not a fan of chorizo? Feel free to omit it completely.
Don't want to make your own salsa verde? Skip this step completely and use shop-bought, or why not try it with shop-bought green pesto for a similar taste?
You can also opt boneless chicken thighs if you prefer, just adjust your cooking time slightly by less.
