litre hot chicken stock
dark soy sauce
mirin
dark brown soft sugar
white miso paste
garlic cloves, crushed
cm piece fresh root ginger, peeled and finely grated
pork shoulder steaks
mixed exotic mushrooms
Juice 1 lime
ramen or other dried noodles
2 pak choi, halved lengthways
2 spring onions, finely sliced
4 soft-boiled eggs, halved (optional), see GH tip
Get ahead:
Make to end of step 2, cool, cover and chill up to 2 days ahead. Reheat on the hob until piping hot (do not boil). Complete recipe to serve.
GH tip:
For perfect soft-boiled eggs, bring a small pan of water to the boil, add 4 medium eggs, reduce heat to low and simmer gently for 6min. Drain, put into a large bowl of cold water to stop the cooking, and leave to cool before peeling.
