This lasagne recipe only requires 5 ingredients and couldn't be easier to assemble! Jarred roasted peppers are the secret to a super simple but flavoursome sauce here. Use any cheese you like - swap the Parmesan for mature Cheddar cheese, mozzarella, or even a smoked cheese.

(24) small beef meatballs, we used M&S Aberdeen Angus
350g
jarred peppers (drained weight)

fresh lasagne sheets

Directions
Step 1Preheat oven to 200°C (180°C fan) mark 6. Heat oil in a large frying pan over medium-high heat. Add meatballs and fry, turning regularly, for 5-6min until browned all over. Pour off and suitably discard all but about 3tbsp of the oil.
Step 2Meanwhile, thickly slice the peppers. Whizz 200g in the small bowl of a food processor, or with a stick blender, until smooth. Add pepper purée and some seasoning to the browned meatballs and cook for 1min, stirring to scrape any caramelised bits from the bottom of the pan.
Step 3Spoon ½ the meatball mixture into the base of a 1.8-2 litre ovenproof serving dish (a rough 21cm square one works well) and spread evenly. Sprinkle over ½ the sliced peppers and a small handful of Parmesan. Arrange ½ the pasta sheets on top and spread over ½ the cheese sauce. Repeat layers once more, finishing with a final scattering of Parmesan and some freshly ground black pepper.
Step 4Cover dish with foil and cook in the oven for 30-35min, removing the foil for the final 15min, or until browned and bubbling. Serve.
Can I switch out the beef meatballs?
Absolutely, pork or lamb meatballs would also work well. Or if you've got a little more time, you can make sausage meatballs by taking an equivalent weight of sausages and squeeze the meat from the skins and roll into grape-sized balls.
I can't find fresh lasagne sheets, can I use dried ones?
Yes, but they'll need to be cooked briefly in boiling, salted water first - just until flexible.
What should I serve with this lasagna?
It's a complete meal by itself, but if you wanted something fresh and crunchy alongside you could serve a refreshing salad, like our courgette ribbon salad, or to make a heartier meal add some homemade garlic bread.
