An easy version of this classic chicken dish.
One of Britain’s favourite meals and a definite improvement when made at home, this chicken tikka masala is an easy chicken recipe.
Try making some garlic and coriander naans to accompany this dish.
vegetable oil
large onion, finely sliced
tikka masala paste, we used Patak's
2tbsp tomato purée
skinless chicken breasts, cut into bite-sized pieces
tin chopped tomatoes
mango chutney
natural yogurt
double cream
Large handful fresh coriander, roughly chopped
Heat the oil in a large pan (that has a tightly fitted lid). Add the onion and a pinch of salt and cook over low heat, covered, for 20min or until onions are completely softened.
Take off the lid and stir in the tikka masala paste, tomato purée and chicken pieces. Fry for a few min, then add the tomatoes. Bring up to the boil and simmer for 8-10min or until the chicken is cooked through.
Stir in the chutney, yogurt and cream and heat through. Check the seasoning. Garnish with coriander and serve with rice or our Garlic and Coriander Naan breads, if you like.
