These speedy little bites are a doddle to make. If you’re not a fan of goat’s cheese, use plain cream cheese instead.
These veggie alternative blinis are so easy to make, but don't compromise on flavour at all. Using ready made blinis, all they require is the assembling of goats cheese, honey, herbs and lemon on top. This makes them a great stress-free option for a canapé party, dinner party or Sunday lunch celebration.
(5oz) soft goat's cheese
double cream
Small bunch of mint
Small bunch of parsley
Zest 1/2 lemon
ready made blinis
Runny honey
Using an electric whisk, whip 150g (5oz) soft goat’s cheese until light, then whisk in 4tbsp double cream. Fold in the
finely chopped leaves from a small bunch each of mint and parsley, the zest of ½ lemon and seasoning. Use the mixture to top 24 ready-made blinis, then drizzle each with runny honey. Serve.
