Nothing says comfort food quite like a cheese toastie on a cold day. We’ve taken the classic grilled cheese sandwich recipe and elevated it with the addition of punchy wholegrain mustard, shredded ham hock, sliced gherkins and nutty Gruyere, layered between homemade sourdough.
Whether you’re after a quick dinner or something to dunk in a warm mug of soup, this Swiss grilled cheese sandwich is hard to beat. Better yet, you can use up any stale bread (plus experiment with leftover cheeses, charcuterie and pickles) to reduce your food waste in the process. Win, win.
While we’ve made ours the old-school way in a preheated frying pan (be sure to press down with a spatula during cooking for those deliciously golden grill marks and oozing cheese pockets), but you can use a sandwich toaster if preferred.

Spread 4 slices of sourdough bread with soft butter, turn over, spread each with 1/2 tbsp wholegrain mustard; divide 4 sliced gherkins between 2 slices, top with 100g shredded ham hock and 100g grated Gruyere cheese, sandwich together and cook in a preheated frying pan, over a medium heat for 4-5 mins each side, pressed or weighted down until toasted, melted and hot through.
