This Christmas, swerve shop-bought stuffing and give our clementine, sage and onion stuffing loaf a go instead. It's quick, easy, and full of festive flavours the whole family will love.
Can't find clementines? Use the finely grated zest of 1/2 small orange in the stuffing mixture. We've also included helpful tips on preparing the stuffing loaf in advance to save time in the kitchen on Christmas Day.
Small handful sage, leaves picked and finely chopped

Directions
Step 1Preheat oven to 190°C (170°C fan) mark 5. For the loaf, heat the oil in a medium pan over medium heat and cook the onions for 10min, until softened. Tip into a large bowl; cool.
Step 2Mix the sage, clementine zest, breadcrumbs, sausage meat, egg and plenty of freshly ground black pepper into the onion bowl.
Step 3Lightly grease a 900g loaf tin. Line the base and sides with the bacon (you may have to stretch the bacon slightly to fit), leaving a little overhanging over the sides. Spoon in the onion mixture, pressing down and smoothing to level. Fold in any overhanging bacon. Cover tin with foil.
Step 4Cook for 1hr, removing the foil for the final 15min.
Step 5Meanwhile make the garnish, if you like. Heat the oil in a frying pan over high heat. Fry the clementine slices until caramelised. Carefully lift on to a plate lined with kitchen paper. Next fry the sage leaves until crisp. Add to the plate.
Step 6Remove loaf from oven. If there is a lot of liquid in the tin, carefully pour out. Invert loaf on to a baking tray. Remove tin and return loaf to the oven for 10min, or until bacon is golden and crispy.
Step 7Leave to rest for 10min, before transferring to a board or serving plate. Top with the fried clementine slices and sage. Serve.

Prepare to end of step 3 up to a day ahead (do not preheat oven). Chill. Complete recipe to serve.
