These za’atar roasted carrots are vibrant, flavoursome and probably one of the easiest side dishes you'll ever make.
You can enjoy these as a side dish in summer, alongside a BBQ with grilled meats and fresh salads, but this recipe also works well as a side dish to chicken, lamb and roast potatoes. Perfect for a Sunday roast or a Christmas feast.
Feel free to mix up the root veg you use. You could try parsnips instead if you want the recipe to feel more festive and if you're planning on serving at a BBQ, we'd recommend par-boiling the carrots first until just cooked through, then mix with the za'atar and oil and finish on the hot grill to char them at the very end.
Sprinkle with sesame seeds and plenty of dill or parsley if you'd like.
